Roasted Red Pepper Hummus
Ingredients
2 15.5oz. cans chickpeas, drained and rinsed
1/2 cup roasted red pepper
5 tbsp cup tahini
Juice from 1 lemon
2 tbsp olive oil
4 cloves garlic
1/2 tsp paprika
salt and pepper to taste
5 tbsp ice cold water, gradually added
Directions
- Add all of your ingredients to a food processor or blender, except the ice water. Blend until totally smooth.
- Continue blending and slowly add your 5 tbsp of ice cold water until your desired consistency is reached.
- Taste and adjust as needed, add more salt, lemon, etc.
- Serve with paprika, more roasted red pepper, pita, veggies, and enjoy!
